My taste buds wanted a different type of rice today. Something easy to make and creamy but it must also look fab! I thought about making Nigerian Jollof Rice but no, must try something different and simple. I looked around for ingredients in my cupboards to create a new recipe. I also looked online to get some inspiration. I somehow used the Jollof Rice (Nigerian Dish) method of cooking in this recipe but with my own twist, of course. I love vegetables and colours so they are the bases for my recipe.
HOW TO COOK IT:
Wash the rice and put to one side.
Grate the two carrots ( put some aside for dressing the dish), cut the Broccoli very small pieces, slice up the Red Onion.
Put a pot on the stove to heat up some vegetable oil.
Once heated, pour in the Red Onion to fry for about 2 minutes then add the grated carrots to fry together. Fry for about 5 minutes.
Open the can of Mushroom Soup and add half a the can to the fry up and also add some water to make it more runny. Mix well and leave to cook for 5 minutes.
Add in the washed rice, Add the small pieces of Broccoli and add all the seasonings too.
Cover to cook.
Once cooked, dish and use the grated carrots to dress the dish and plate.
The dish was delicious and it looked fab too. It tasted creamy with a bust of favour and the crunchiness of the carrots gave it texture as you chew. The look of it was very exotic with association to any country you wish to credit it to. I will say it's Nigerian style Creamy mushroom Rice with Grated Carrot Garnish. Try it and name yours how you wish.
